Couscous Salad

(recipe under construction..) Ingredients: Couscous, cooked lemon juice feta cheese, crumbled kidney beans tomatoes, diced sweet corn spring onions, sliced coriander, chopped Method: Pop all of the ingredients into a large bowl and mix together. Season well. Keep in the fridge for up to 4 days. This is ideal for quick lunches throughout the week!

Garlic and Chilli Sauce

Ingredients: 100g caster sugar 2 tbsp white wine vinegar 1 long red chilli, finely chopped 2 garlic cloves, peeled and finely chopped 15g piece fresh root ginger, peeled and finely chopped 1 tbsp chopped fresh coriander Method: Put the sugar, 50ml water and one tablespoon of the vinegar in a small saucepan and gently heat until the sugar dissolves, stirring constantly.Continue reading “Garlic and Chilli Sauce”
