Veggie Fajitas

Ingredients:

  • 1 large red onion, sliced
  • 3 cloves garlic, crushed
  • 150g mushrooms, diced
  • 2 peppers, sliced
  • 1 cabbage, cooked (recipe here)
  • 1 tin kidney beans
  • 1 packet of fajita seasoning
  • 1 tin chopped tomatoes

Method:

  1. Fry off the onion until soft.
  2. Add in the garlic and fry for a further 1 minute.
  3. Add in the mushrooms and cook until they start to gain a little colour.
  4. Add in the peppers and cabbage, mix and let it all soften.
  5. Once the veg are all cooked add in the kidney beans, fajita mix and chopped tomatoes.
  6. Cook until hot all the way through and the sauce is at your desired consistency.
  7. We serve this with Jacket Potatoes and my homemade salsa (recipe here), but you can put them into wraps or even on top of nachos! The possibilities are endless!
