Ingredients:
- 1 large red onion, sliced
- 3 cloves garlic, crushed
- 150g mushrooms, diced
- 2 peppers, sliced
- 1 cabbage, cooked (recipe here)
- 1 tin kidney beans
- 1 packet of fajita seasoning
- 1 tin chopped tomatoes
Method:
- Fry off the onion until soft.
- Add in the garlic and fry for a further 1 minute.
- Add in the mushrooms and cook until they start to gain a little colour.
- Add in the peppers and cabbage, mix and let it all soften.
- Once the veg are all cooked add in the kidney beans, fajita mix and chopped tomatoes.
- Cook until hot all the way through and the sauce is at your desired consistency.
- We serve this with Jacket Potatoes and my homemade salsa (recipe here), but you can put them into wraps or even on top of nachos! The possibilities are endless!
