The Veggie Diaries: Week 3

Friday 15.01.21
Breakfast- Black Coffee (vegan)
Lunch- Poached Egg on Toast (vegetarian)
Dinner- Garlic + Honey Tofu Rice Bowl (vegetarian)

Conclusion- DAY 15: I have to say we FINALLY got the PERFECT poached eggs today!! They were amazing, so gooey and delicious.
Ok so I final got the courage to try making tofu! I have been putting this off for so long now as I just didn’t think it would taste nice. I decided to make a wagamama inspired rice bowl using my Garlic + Honey chicken recipe and swapping out the chicken for tofu! And damn it was amazing! The tofu was nice and chrispy on the outside and nice and soft in the middle. The tofu it’s self didn’t really taste of much, so I found it really good covered in the sauce!

Saturday 16.01.21
Breakfast- Black Coffee (vegan)
Lunch- Mustard ‘chicken’ with pasta (vegetarian)
Dinner- Morrisons 4 cheese Pizza with tomatoes and onion on top (vegetarian)

Conclusion- DAY 16: Today I felt super nauseous again! argh. Thankfully my dad went to the shop and got me Gaviscon and that stopped it just in time for me to have dinner. Dad made us pizzas (I say made, they were frozen, we just added some veggies haha.) It was super nice, a little rich but touch wood I still don’t feel sick again. So the Gaviscon clearly worked! Yay!

Sunday 17.01.21
Breakfast- Black Coffee (vegan)
Lunch- Pesto Pasta (vegan)
Dinner- Roast (vegan)

Conclusion- DAY 17: Pesto pasta has to be one of my favourite things at the moment!! I need to make more soon as I have run out, but I am waiting to see if my plant perks up a bit before I buy one from Morrie’s. I also want to find another alternative to have at lunch. Something pasta based and really fast to make.. I’ll keep you posted. Ok I’ll admit I am REALLY missing my roast chicken. The roasted veg is delicious and I do feel satisfied after eating it, but I do really miss the chicken at the time now.

Monday 18.01.21
Breakfast- Tropical Fruit Smoothie (vegan)
Lunch- Green Tea + Snacks (vegetarian)
Dinner- Quorn ‘Mince’ Cottage Pie + Peas (vegetarian)

Conclusion- DAY 18: Exciting stuff… I have found a way of getting fruit in my diet without having to actually eat it. haha (i hate the texture of most fruit) So today I bought these cool frozen smoothie mixes, all you do is blend together 150ml apple juice and 100g of the mix and it creates the BEST smoothies. I bought a Tropical one that I had today and a berry one that I am yet to try! The tropical one was AMAZING would defo recommend you try it! Ok.. and for dinner I made Quorn ‘mince’ cottage pie, it was so good! Here is the recipe, and all I did was swap the Beef Mince for Quorn Mince! It’s as easy as that!

Tuesday 19.01.21
Breakfast- Berry Smoothie, Green Tea + Actimel (vegetarian)
Lunch- Leftover Quorn ‘Mince’ Cottage Pie + Peas (vegetarian)
Dinner- Nachos (vegetarian)

Conclusion- DAY 19: I tried the Berry Smoothie Mix! It was really good, though I would say that (this may just be my blender) but the raspberries left little seeds all through the smoothie so you really wanna just swallow it like doing shots, or they will get stuck in your teeth haha. Really yummy though would defo recommend! Next time I go to the shops I am going to see what other mixes they have and will try them too. For dinner I had Nachos! Using my vegan cheese again, its so gooey and nice! For this nachos I used Quorn chicken bits, I didn’t really like the texture, so next time I would just use beans and pack it with loads of veggies, but I wanted to test the ‘chicken’ bits just in case.

Wednesday 20.01.21
Breakfast- Tropical Smoothie, Green Tea + Actimel (vegetarian)
Lunch- None (vegan lol)
Dinner- Leftover Nachos (vegetarian)

Conclusion- DAY 20: Not a very exciting day today, I ate very little. So not much to report. haha.

Thursday 21.01.21
Breakfast- Granola, Green Tea + Actimel (vegetarian)
Lunch- None (vegan lol)
Dinner- Potato Curry + Rice (vegetarian)

Conclusion- DAY 21: Ok so tonight I made my Curry <click to see the recipe, but instead of using chicken I boiled some potatoes and added them! It was really nice, but with the potatoes and rice it was VERY carb heavy and not much if any veg.. will defo alter this recipe to make it more healthy.

END OF WEEK REVIEW: This week was good, I’m not missing Pork or Beef anymore, however I am starting to miss chicken quite a bit. I did start to feel a bit tired but that soon passed and I don’t think it is to do with being vegetarian. Only 1 more week to go and can say for sure that I wont be eating Beef or Pork when this month is over. Though I am still not sure if I will be able to stay off the chicken haha. I’ll let you know!
