Breakfast- Black Coffee (vegan)
Lunch- Poached eggs and soldiers (vegetarian)
Dinner- Chickpea Curry (vegan minus the soured cream)
Conclusion- DAY 1: Hello guys and welcome to 2021! Another year and a fresh start. Day 1: This is the start of my vegetarian journey! I am super excited for this challenge, and honestly I am hoping to continue with eating veggie after my month is up! As you can see above I will be letting you know what I eat each day and if it was vegan of just vegetarian. I will be trying to eat vegan as much as possible.
So review for todays food… Lunch was delish, can’t go wrong with egg on toast.. but of course it wasn’t vegan unfortunately. But I am really craving eggs at the mo. haha! Dinner was….amazing! Chickpea Curry. Super easy to make and really yummy. Find the recipe here!

Saturday 02.01.21
Breakfast- Black Coffee (vegan)
Lunch- Chickpea Curry (vegan)
Dinner- Veggie Meatballs (vegan minus the garlic bread)
Conclusion- DAY 2: Again a pretty easy day. I don’t tend to feel hungry in the mornings so just have a coffee.. and it was really nice to have some curry leftover that I could have for lunch! Tonight for dinner I tried out Green Cuisine Meat-Free Meatballs! and they were good.. not going to lie I’m not gagging to have them again soon (unlike that curry from last night.. wow I am already craving it again!), but if I happen to crave spagbol they will be a good alternative to have in the freezer. I think you just need to accept that they aren’t beef and wont taste EXACTLY like meatballs.. but they are yummy and a great alternative! (sorry mixed signals? haha) The meatballs are VEGAN which is great… the only thing I had that wasn’t vegan (I’m assuming) is my garlic bread. But that…like the soured cream is something I absolutely love and will struggle to quit.

Sunday 03.01.21
Breakfast- Black Coffee (vegan)
Lunch- Spagbol (vegan)
Dinner- Roast (vegetarian)
Conclusion- DAY 3: Ok today was TOUGH! Again i just had a black coffee for breakfast, and then leftover spagbol for lunch! But it was dinner where I struggled! I had to try really hard to stay away from the Roast Pork… but I managed (some how). I made soooo many veggies to keep me from missing the meat. I made; Roast Potatoes, Swede, Christmas Red Cabbage, Roasted Parsnips, Roasted Carrots, Yorkshire Puddings and lastly a mixture of Greens that needed using up in the freezer! It was AMAZING!! I did forget about the meat once I tucked in and I’m hoping that at the end of this month I will no longer crave the meat! (fingers crossed). Anyways, another successful day!

Monday 04.01.21
Breakfast- Black Coffee (vegan)
Lunch- Poached Egg on Toast (vegetarian)
Dinner- Homemade Wedges, Peas and Vegan ‘Chicken’ Nuggets (vegan)
Conclusion- DAY 4: Ok it seems I will be having a black coffee for breakfast for the foreseeable future! haha. I just love it. For lunch I had the classic… Poached Egg on Toast! I absolutely love making poached eggs now I have the OXO Poacher.. I can not recommend it enough! If you want one click here, it will change your poaching game and make having eggs much healthier!!
For dinner I then had fake chicken nuggets, homemade wedges and peas. This was a shocker. I didn’t have high hopes for the nuggets, but I kid you not they tasted exactly like real nuggets!??! Will definitely be buying them again. Well done Birdseye!

Tuesday 05.01.21
Breakfast- Black Coffee (vegan)
Lunch- Pesto Pasta (vegetarian)
Dinner- Jacket Potatoes and Baked Beans, with vegan Mozzarella on top (vegan)
Conclusion- DAY 5: I don’t think I need to comment on my breakfasts anymore. haha.
Lunch was sooooo good. I had Pesto Pasta with tomatoes, spring onion and lots of cashews! Using my homemade frozen Pesto! One of my favourite Freezer Hacks! Check it out HERE. For dinner I had a very quick and easy meal, Jacket Potatoes and Beans…of course with my amazing Vegan Cheese on top! The one thing I was most worried about, doing this Vegetarian month is the quick and lazy meals. I love cooking from scratch and am super excited to try lots of yummy vegetarian meals. But some nights you just need something quick and easy.. So far I am finding a good few meal ideas for nights like this. So fingers crossed I fins a new more options and will keep going for more than just one month.

Wednesday 06.01.21
Breakfast- Black Coffee (vegan)
Lunch- Nachos (vegetarian)
Dinner- Brinner (vegetarian)
Conclusion- DAY 6: For lunch today I wanted something really quick and easy to make.. and I figured I would make good use out of my gooey vegan cheese! So I decided to have Nachos with Homemade Salsa and Soured Cream! I was so yummy and filling, the perfect light lunch.
For dinner we had brinner! Brinner = Breakfast for Dinner. I had Richmond Vegetarian Sausages, Poached Eggs, Beans and Chips. It was such a treat… especially as I didn’t have to make it. My boyfriend just wondered into the Kitchen and made it…. so random but AMAZING to have a night off. Yay!

Thursday 07.01.21
Breakfast- Black Coffee (vegan)
Lunch- Meat-free nuggets, wedges, onion rings and peas (vegetarian)
Dinner- Spicy Bean Burgers (vegetarian)
Conclusion- DAY 7: Still loving these Birdseye Meat-free Nuggets, so I had to have them for lunch after a long 4k walk and 45 min workout! They definitely filled me up nicely. (head to my Insta @theeviewells to see all of my meals!)
For dinner we (as a family) all had Spicy Bean Burgers! We have been eating these for a couple years now, even though we weren’t veggie. They are just so yummy, affordable and an easy quick meal. We have these most weeks and only have beef burgers on a rare occasion now! Please try them!

END OF WEEK REVIEW: Well wow, week one is already over. I’m feeling good. I started this journey for health reasons as well as for the planet. I used to get a swollen tummy most nights after eating dinner… over the years I have cut out so many foods, but for some reason never even considered meat might be the problem…but I have been veggie for a week now, and not once have I had a swollen or painful tummy! I don’t believe the change I feel already! So excited for next week.
I have just been to the shop and found some new bits to try! I am trying out Quorn Mince (for spagbol), Quorn Chicken (for mustard chicken… a meal that I always crave and will struggle with being meat-free the most, so I am hoping it is good!), and finally I have bought…. TOFU! I am absolutely daunted by tofu.. I have no idea how to cook it, and I don’t want to cook it bad and get put off.. but you don’t know until you try!
