It is currently Boxing Day 2020 and I am watching Forest Gump with my dad and boyfriend, while trying not to eat all of the food that surrounds me.
I have decided that my New Year’s Resolution for 2021 will be that I will go Vegetarian for AT LEAST one month. I am hoping that if I can do it for a month, that I will be able to keep going and have it become part of my lifestyle. But I don’t want to go all in with unrealistic expectations. So I have set the realistic goal of one month, and anything more than that is just a bonus.
So I have been thinking I need a game plan, if i am to succeed.
This will include EASY meals i can just whack in the oven, meals that i can have along side the rest of my family (they won’t be going vegetarian, but i’m sure they will enjoy some of the veggie meals i prepare) i didn’t want to force my decision to go veggie on them, instead i am hoping to inspire them with the food choices i make and give them the option.
Right the game plan, time to make a list of some meals i can make:

EASY (whack in the oven) MEALS:
-Veggie/Bean Burgers, Peas and Chips
-Fishless fingers, chips and peas
-Jacket Potato and Beans
–Pesto Pasta with Cashews and Cherry Tomatoes (using my homemade and frozen pesto for convenience)
-Veggie Pizza (frozen margarita with added veg or homemade using my recipe here)
MEAT-FREE ALTERNATIVES TO OUR REGULAR MEALS:
-Veggie Sausages, Mash, Peas and Caramelised Onions
-Veggie Hot Dogs with Caramelised Onions and Chips
-Lentil Spagbol, Peas and Garlic Bread
–Vegetarian Lasagne, Peas and Garlic Bread
–Vegetarian Fajitas/Nachos with Homemade Salsa
–Curry (with potato instead of chicken) and Rice
–Sweet Potato Satay Curry and Rice
–Veggie Stir-fry with poached eggs and cashews
–Vegetarian Sausage Pasta
–Mushroom Risotto
NEW VEGGIE MEALS TO TRY:
-Vegetarian Cottage Pie (replace the mince with meatfree alternative)
-Slow Cooker Vegetable Stew (use my beef stew recipe and add more veg instead of the meat)
–Thai green veggie curry (use my recipe, leave out the chicken and add more veg)
–Mustard ‘Chicken’ (find a new alternative to the chicken part)
Ok… so now we have some meal ideas (i will keep adding to the list as the month goes on, so i can refer back to it whenever i need meal inspiration)
I will also be adding any of my successful recipes to my Veg page!
I thought it would now be useful to write a shopping list. This is just things that i will want to have in the house each week to make sure i am eating good nutritious meals. I am also just about to place an online Morrison’s order with some Vegetarian alternatives on, so I will give them a try and let you know what i like and what isn’t so good. I have also added the prices next to each item (this is the versions we buy from Morrison’s) as i am always interested in how much things cost. Many people also think that eating vegetarian or vegan is more expensive.. so i wanted to track costings out of curiosity! I might do a review at the end of the month to let you know how much i spent!
It is also worth noting at this point that i will be choosing vegan options where i can…but vegan isn’t my goal.
