Ingredients:
- 1 onion, diced
- 2 cloves garlic, crushed
- 3 x 400 g tins of chopped tomatoes
- 1 bunch of fresh basil (or 1 teaspoon dried instead), chopped
- salt + pepper
- 500 g dried pasta
- 2 x 180g tins of tuna
- 150 g mature Cheddar cheese (or whatever cheese your family prefers)
Method:
Pre-heat the oven on 200c
- Fry the onion until softened.
- Add the garlic and cook for a further 1 minute.
- Pour in the chopped tomatoes and basil.
- Stir well and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Drain the tuna and stir through the sauce, making sure you don’t break it up too much. Season to taste.
- Cook the pasta, drain and tip straight into the sauce.
- Give it a good mix and pop into an ovenproof baking dish (about 25cm x 30cm).
- Sprinkle over the grated cheese and place in the oven for 15 to 20 minutes, or until golden and bubbling.
- Leave to stand for 5 minutes, then serve with greens of your choice.
