Tuna Pasta Bake

Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 3 x 400 g tins of chopped tomatoes
  • 1 bunch of fresh basil (or 1 teaspoon dried instead), chopped
  • salt + pepper
  • 500 g dried pasta
  • 2 x 180g tins of tuna
  • 150 g mature Cheddar cheese (or whatever cheese your family prefers)

Method:

Pre-heat the oven on 200c

  1. Fry the onion until softened.
  2. Add the garlic and cook for a further 1 minute.
  3. Pour in the chopped tomatoes and basil.
  4. Stir well and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Drain the tuna and stir through the sauce, making sure you don’t break it up too much. Season to taste.
  7. Cook the pasta, drain and tip straight into the sauce.
  8. Give it a good mix and pop into an ovenproof baking dish (about 25cm x 30cm).
  9. Sprinkle over the grated cheese and place in the oven for 15 to 20 minutes, or until golden and bubbling.
  10. Leave to stand for 5 minutes, then serve with greens of your choice.
