Chickpea Tuna

Ingredients:

  • 1 Tin of Chickpeas, drained and rinsed
  • sweetcorn, however much you would like
  • mayo, however much you would like
  • salt + pepper, to taste

Method:

  1. Pop your chickpeas into a bowl and mash up with a fork. I like to leave mine a little coarse, so there are some lumps but that is just personal preference.
  2. Add in your mayo and sweetcorn and mix well. Use as much or as little as you like. Most of this recipe is down to personal preference.
  3. Season to taste and enjoy! I love this with some nice jacket potatoes.

Tip: To make this recipe Vegan use Vegan Mayo!
