Ingredients:
- 1 Tin of Chickpeas, drained and rinsed
- sweetcorn, however much you would like
- mayo, however much you would like
- salt + pepper, to taste
Method:
- Pop your chickpeas into a bowl and mash up with a fork. I like to leave mine a little coarse, so there are some lumps but that is just personal preference.
- Add in your mayo and sweetcorn and mix well. Use as much or as little as you like. Most of this recipe is down to personal preference.
- Season to taste and enjoy! I love this with some nice jacket potatoes.
Tip: To make this recipe Vegan use Vegan Mayo!
