Granola

Ingredients:

  • 4 cups oats
  • 1.5 cups nuts, roughly chopped (I used pecans, hazelnuts and cashews)
  • pinch of salt
  • 1/2 tsp cinnamon
  • 1/2 cup oil
  • 1/2 cup honey/golden syrup
  • 1 tsp vanilla
  • 1.5 cup dried fruit (I used dates, apricots and sultanas)
  • 1/3 cup coconut flakes
  • 1/3 cup chia seeds

Pre-heat your oven to 180c.

Method:

  1. Mix together the oats, nuts, salt, cinnamon, oil, honey and vanilla together.
  2. Pour onto oven-proof baking sheets.
  3. Spread evenly using a spoon.
  4. Bake for around 20-25 minutes until golden (give it a stir half way for extra clumpy granola!).
  5. Leave to cool fully.
  6. Pop it all into a large bowl and add in the dried fruit, coconut and chia seeds.
  7. Give it a good stir and whack in a nice jar (air tight) so that it is ready for eating!

Tip: Store in an air tight container for 1-2 weeks or freeze for up to 3 months.
