Ingredients:
- 4 cups oats
- 1.5 cups nuts, roughly chopped (I used pecans, hazelnuts and cashews)
- pinch of salt
- 1/2 tsp cinnamon
- 1/2 cup oil
- 1/2 cup honey/golden syrup
- 1 tsp vanilla
- 1.5 cup dried fruit (I used dates, apricots and sultanas)
- 1/3 cup coconut flakes
- 1/3 cup chia seeds
Pre-heat your oven to 180c.
Method:
- Mix together the oats, nuts, salt, cinnamon, oil, honey and vanilla together.
- Pour onto oven-proof baking sheets.
- Spread evenly using a spoon.
- Bake for around 20-25 minutes until golden (give it a stir half way for extra clumpy granola!).
- Leave to cool fully.
- Pop it all into a large bowl and add in the dried fruit, coconut and chia seeds.
- Give it a good stir and whack in a nice jar (air tight) so that it is ready for eating!
Tip: Store in an air tight container for 1-2 weeks or freeze for up to 3 months.
