Garlic Mushroom Pasta

Ingredients:

  • 2 onions, chopped
  • 7 oz mushrooms, sliced
  • a handful of cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 tsp Dijon mustard
  • 1/4 cup chicken stock
  • 1/2 tsp lemon juice
  • 1/2 cup grated parmesan
  • salt + pepper, to taste
  • 400g pasta, cooked
  • Peas, to serve (optional)

Method:

  1. In a saucepan, fry off your mushrooms and onions until lightly caramelized.
  2. Add in the garlic, Dijon mustard and tomatoes and fry for another minute or so.
  3. Add in the chicken stock and lemon juice and let bubble for a minute.
  4. Take it off the heat and add in the cheese and pasta.
  5. Stir it all together and serve up with some peas (optional).
