Feta Tomato Pasta

Ingredients:

  • 300g cherry tomatoes
  • olive oil
  • 1 onion, quartered
  • 3 cloves garlic, peeled and smashed
  • Salt + pepper
  • 1 (200g) block feta
  • 285 g pasta
  • Zest of 1 lemon (optional)

Pre-heat the oven on 200c.

Method:

  1. In an oven-proof dish, add your tomatoes, a drizzle of oil, onion, garlic, salt and pepper.
  2. Give it a good mix together and add the block of feta to the middle.
  3. Drizzle over a little bit of oil just to the feta.
  4. Pop it in the oven for 40-45mins until the tomatoes are poppin’ and the feta is going golden.
  5. When the tomatoes and feta are nearly done, pop some pasta on to boil.
  6. When you drain the pasta, save about 120ml of the pasta water.
  7. Put the drained pasta back into the pot the cooked it in, and add in your tomatoes, feta, the reserved pasta water and the optional lemon zest.
  8. Stir well until completely combined.
  9. Serve up and enjoy!

Tip: This goes really well with garlic bread!
