Ingredients:
- 300g cherry tomatoes
- olive oil
- 1 onion, quartered
- 3 cloves garlic, peeled and smashed
- Salt + pepper
- 1 (200g) block feta
- 285 g pasta
- Zest of 1 lemon (optional)
Pre-heat the oven on 200c.
Method:
- In an oven-proof dish, add your tomatoes, a drizzle of oil, onion, garlic, salt and pepper.
- Give it a good mix together and add the block of feta to the middle.
- Drizzle over a little bit of oil just to the feta.
- Pop it in the oven for 40-45mins until the tomatoes are poppin’ and the feta is going golden.
- When the tomatoes and feta are nearly done, pop some pasta on to boil.
- When you drain the pasta, save about 120ml of the pasta water.
- Put the drained pasta back into the pot the cooked it in, and add in your tomatoes, feta, the reserved pasta water and the optional lemon zest.
- Stir well until completely combined.
- Serve up and enjoy!
Tip: This goes really well with garlic bread!
