Gnocchi

Ingredients:

  • 1 kg boiled potatoes
  • pinch of salt
  • 300g plain flour

Method:

  1. Mash up your potatoes and season with a pinch of salt.
  2. Place the mash onto a clean worksurface and kneed in the flour.
  3. Keep kneading until it forms a dough.
  4. Divide the dough into 4 pieces and roll each chunk into 2cm thick sausages.
  5. Now cut up the dough sausages into 1cm nuggets.
  6. Using a fork roll the nuggets into little spiral shapes (this step is optional).
  7. Bring a pan of water to the boil and add all of your gnocchi. Cook until they come to the surface.
  8. Drain and serve up with your favourite sauce (Pesto is really good apparently).

Freezer Tip: You can easily freeze gnocchi. Once they’ve been formed into dumplings, lay them in a single layer on two baking sheets, cover with cling film and freeze until solid, then transfer to sandwich bags and keep for up to 2 months. You can then boil them in a pan of simmering water straight from frozen until they bob to the surface.
