Ingredients:
- 1 kg boiled potatoes
- pinch of salt
- 300g plain flour
Method:
- Mash up your potatoes and season with a pinch of salt.
- Place the mash onto a clean worksurface and kneed in the flour.
- Keep kneading until it forms a dough.
- Divide the dough into 4 pieces and roll each chunk into 2cm thick sausages.
- Now cut up the dough sausages into 1cm nuggets.
- Using a fork roll the nuggets into little spiral shapes (this step is optional).
- Bring a pan of water to the boil and add all of your gnocchi. Cook until they come to the surface.
- Drain and serve up with your favourite sauce (Pesto is really good apparently).
Freezer Tip: You can easily freeze gnocchi. Once they’ve been formed into dumplings, lay them in a single layer on two baking sheets, cover with cling film and freeze until solid, then transfer to sandwich bags and keep for up to 2 months. You can then boil them in a pan of simmering water straight from frozen until they bob to the surface.
