Slow-Cooker Brownies

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 oz unsalted butter, cut into pieces
  • 8 oz chocolate, chopped
  • 1 cup sugar
  • 3 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (or whatever nuts you have to hand)
  • 1 cup chocolate chips

Method:

  • Line your slow-cooker with some grease-proof paper. Making sure it goes up the sides a bit.
  • Place butter and chopped chocolate in a medium Pyrex bowl and melt either in the microwave or over a pan of simmering water (as I show you in my video below)
  • Add sugar to chocolate mixture and whisk to combine.
  • Whisk in eggs and vanilla.
  • Stir in the flour, cocoa powder, baking powder, and salt.
  • Fold in pecans and chocolate chips.
  • Pour batter into your lined slow-cooker, smoothing out the top with a rubber spatula.
  • Cover and cook on Low for 3 1/2 hours.
  • Remove insert from crockpot and place on a wire rack to cool completely.
