Ingredients:
- 1 pack of sausages (veggie ones work too!)
- 1 tin of chopped tomatoes
- 1 sachet of sausage casserole mix
- 150g mushrooms, sliced
- 2 onions, diced
- 3 cloves garlic, crushed
- 2 bell peppers, sliced
- 1 tin of haricot beans (or any beans you have)
Method:
- To your Slow-cooker add your chopped tomatoes and sausage casserole mix.
- Give it a good stir until they are both combined.
- Add in your Mushrooms, Onions, garlic, peppers and beans. Give it another stir.
- Brown off your sausages in a frying pan and pop them into the slow-cooker.
- Pop the slow-cooker on high for 5 hours or until the vegetables are all soft and the sausages are piping hot.
- Serve up with creamy mash and peas.
Tip: If you think the casserole needs thickening, simply add 2tbsp of corn flour to a little bowl with 2 tbsp of the casserole liquid. Give it a good mix and add it into the slow-cooker. Give it a stir and this will thicken it in minutes.
