Sausage Casserole

Ingredients:

  • 1 pack of sausages (veggie ones work too!)
  • 1 tin of chopped tomatoes
  • 1 sachet of sausage casserole mix
  • 150g mushrooms, sliced
  • 2 onions, diced
  • 3 cloves garlic, crushed
  • 2 bell peppers, sliced
  • 1 tin of haricot beans (or any beans you have)

Pre-heat your oven to 220c

Method:

  1. In a large baking tray add your chopped tomatoes and sausage casserole mix.
  2. Give it a good stir until they are both combined.
  3. Brown off your sausages in a frying pan and pop to one side.
  4. Fry off your onion and garlic until softened and add them to the baking tray.
  5. Fry off your mushrooms until golden and add them to the baking tray.
  6. Add in the peppers and beans and give it all a good mix.
  7. Add in your sausages and let cook in the oven for a good 30-40 minutes.
  8. Once it is all done in the oven, it should be piping hot and the sauce will have thickened.
  9. Serve up with creamy mash and peas.

    TIP: (you can pop all of your veggie into the casserole raw if you prefer, this just means you have to leave the casserole in the oven for longer. It is much less faff though if you have plenty of time to let it cook)
