Ingredients:
- 100g dried Couscous
- 100g Sweet potato, diced
- 2 Onions, roughly chopped
- 3 Garlic cloves, crushed
- 50g Green beans
- 50g Tomatoes, quartered
- 1 Carrot, grated (optional)
- 1tbsp Balsamic Vinegar
- 1tbsp Honey
- Salt and Pepper, to taste
(all of my ingredient portions were estimated, next time I make this I will be sure to measure it all out to give you guys a more accurate list to go by)
Pre-heat oven on 200c
Method:
- Boil your sweet potato chunks until softened.
- Add the sweet potato, onion, and garlic to a roasting tray. Lightly oil, and season well.
- Pop the tray in the oven on 200c until nicely golden.
- Add in the tomatoes, balsamic, honey and season well.
- Give a good stir and pop back into the oven until the tomatoes are starting to get some colour.
- Once the veggies are nearly all done, add in the green beans (these don’t take long) and cook your couscous (this takes about 5 mins)
- Once everything is ready just serve up into bowls. I also add grated carrot to add some freshness and crunch, but this is completely optional.
