Roasted Veg Couscous

Ingredients:

  • 100g dried Couscous
  • 100g Sweet potato, diced
  • 2 Onions, roughly chopped
  • 3 Garlic cloves, crushed
  • 50g Green beans
  • 50g Tomatoes, quartered
  • 1 Carrot, grated (optional)
  • 1tbsp Balsamic Vinegar
  • 1tbsp Honey
  • Salt and Pepper, to taste

(all of my ingredient portions were estimated, next time I make this I will be sure to measure it all out to give you guys a more accurate list to go by)

Pre-heat oven on 200c

Method:

  1. Boil your sweet potato chunks until softened.
  2. Add the sweet potato, onion, and garlic to a roasting tray. Lightly oil, and season well.
  3. Pop the tray in the oven on 200c until nicely golden.
  4. Add in the tomatoes, balsamic, honey and season well.
  5. Give a good stir and pop back into the oven until the tomatoes are starting to get some colour.
  6. Once the veggies are nearly all done, add in the green beans (these don’t take long) and cook your couscous (this takes about 5 mins)
  7. Once everything is ready just serve up into bowls. I also add grated carrot to add some freshness and crunch, but this is completely optional.

Serves 2.
