Garlic + Honey Chickpea Rice Bowl

Ingredients:

  • 2 tins of chickpeas
  • 6 cloves of garlic, crushed
  • 1/3 cup honey
  • 1/4 cup water (or vegetable stock)
  • 2 tbsp white wine vinegar
  • 1 tbsp soy sauce
  • Rice, to serve
  • Vegetables of your choice, to serve

Method:

  1. Boil some rice and prep your veggies.
  2. Heat up 1 tbsp of vegetable oil in a pan and add the garlic.
  3. Cook for 1 minute, until fragrant.
  4. Add in the honey, water, white wine vinegar and soy sauce.
  5. Cook until sticky and add in your chickpeas.
  6. Heat through and then serve up with your rice and veggies!

This is a perfect quick mid-week meal. Serves 4.
