Brookies

Ingredients:

  •   85g Cocoa powder
  • 400g Caster sugar
  • 125ml Vegetable Oil
  • 4 Eggs
  • 2tsp Vanilla Extract
  • 250g Plain flour
  • 2tsp Baking Powder
  • 1/2tsp Salt
  • 60g Icing Sugar

Method:

  1. In a medium bowl, mix together the cocoa, caster sugar and vegetable oil.
  2. Beat in eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking powder and salt; stir into the cocoa mixture.
  4. Cover dough, and chill for at least 4 hours.
  5. Preheat oven to 180c.
  6. Line baking trays with parchment.
  7. Pour icing sugar onto a plate and using an ice-cream scoop, spoon and roll mixture into balls coating each one with the icing sugar before placing onto prepared trays
  8. Bake in preheated oven for 10-12 minutes.
  9. Let them stand on the baking tray for a minute before transferring to wire racks to cool.
