The Veggie Diaries: Week 4

Friday 22.01.21
Breakfast- Granola, Tea + an actimel (vegetarian)
Lunch- Poached Eggs on Toast (vegetarian)
Dinner- ‘Fish fingers’, Chips + Peas (vegan)

Conclusion- DAY 22: Today I tried the Birdseye Veggie Fingers! They were really yummy, not like fish, just mushed up veggies in the shape of fish fingers. But a good alternative none the less. (note: the veggies are VERY obvious, so if you are trying to trick a kiddy into eating their veg, they will notice haha)

Saturday 23.01.21
Breakfast- Green Tea, Tropical Smoothie + an Actimel (vegetarian)
Lunch- None
Dinner- Indian Takeaway (vegetarian)

Conclusion- DAY 23: Tonight we went and got an Indian Takeaway after our supermarket shop! I VERY NEARLY CRACKED!! I nearly got a chicken pasanda… but I stayed strong and went for Bombay Potatoes, Pilau Rice, Popadoms, Onion salad and yogurt sauce.. IT WAS AMAZING!! I didn’t even care that I didn’t have the pasanda.. the other bits really made up for it. I want it again right now!!! haha.

Sunday 24.01.21
Breakfast- Black Coffee (vegan)
Lunch- Veggie Stir-fry (vegetarian)
Dinner- Nuggets, Chips + Peas (vegan)

Conclusion- DAY 24: Can’t get over these Birdseye ‘chicken’ nuggets.. they are so yummy and taste just like real chicken, I will defo be making these a permanent swap. No more real nuggets for me! (except perhaps the odd McDonalds ones. haha.)

Monday 25.01.21
Breakfast- Green Tea + Coco Pops (vegetarian)
Lunch- None
Dinner- Brinner (vegetarian)

Conclusion- DAY 25: Gutted the coco pops aren’t vegan, I may look for a vegan alternative as I already use Soya milk, so the cereal is the only thing that stops my breakfast being vegan. (any suggestions please dm my on Instagram @theeviewells )
For dinner we had Breakfast! It was sooo yummy as per. I had the Richmond Sausages again and will defo be making these a permanent switch!

Tuesday 26.01.21
Breakfast- Black Coffee + Coco Pops (vegetarian)
Lunch- Chickpea Curry (vegetarian)
Dinner- Roast Dinner (vegan)

Conclusion- DAY 26: Today I was clearly very hungry. haha. Big lunch and a big roast for dinner. This Chickpea Curry recipe is soooo yummy, quick and healthy!! Find the recipe HERE. For dinner we had a roast (like we do every week, except this time.. it was on a Tuesday.. so crazy right?!)

Wednesday 27.01.21
Breakfast- Green Tea + Granola Bowl (vegan)
Lunch- Yogurt + Banana Bowl (vegan)
Dinner- Chickpea Curry (vegan)

Conclusion- DAY 27: For lunch I had a Yogurt and Banana Bowl! Don’t know why.. I just had a bit of Alpro Yog left from when I made that Potato Curry, and decided to give it a go! I really enjoyed it. It was vegan Alpro Yogurt and was REALLY GOOD!! I will be making the permanent switch from regular yogurt to Alpro now. And for dinner I had leftover Chickpea Curry with leftover pilau rice from my Indian Takeaway the other day! (nothing more satisfying than using up all your leftovers!)

Thursday 28.01.21
Breakfast- Green Tea + an Actimel (vegetarian)
Lunch- Chickpea Curry (vegan)
Dinner- Kebabs (vegan)

Conclusion- DAY 28: This chickpea curry is going a long way! Haha. Think I’ll have enough to eat the rest of the week! For dinner my dad made his famous Kebabs! I just stayed away from the chicken. It was really yummy, but I think I need to find more veggies to eat, as I can’t eat peppers, so my pittas were just filled with onion and mushrooms haha. Maybe next time I will buy an ice burg and make a salad to go with it.

Friday 29.01.21
Breakfast- Green Tea + 3 Bourbons (vegetarian)
Lunch- Jacket Potato + Beans (vegan)
Dinner- Lentil Lasagne (vegetarian)

Conclusion- DAY 29: Tonight I fancied a lasagna!! But instead of making it with Quorn Mince I decided to make it with lentils, as I wanted a cheaper alternative, as Quorn Mince is waaaay more expensive than lentils. It was really yummy!

Saturday 30.01.21
Breakfast- Green Tea, Tropical Smoothie + an Actimel (vegetarian)
Lunch- Leftover Lasagne (vegetarian)
Dinner- Jacket Potatoes, Nuggets, onion rings + Peas (vegan)

Conclusion- DAY 30: For dinner I fancied something super simple and plain, as I felt a little nauseous today. So Jacket Potatoes are always a win! It was so yummy!!

Sunday 31.01.21
Breakfast- Granola Bowl, Green Tea + an Actimel (vegetarian)
Lunch- Nutella on Toast (vegetarian)
Dinner- Mushroom Alfredo (vegetarian)

Conclusion- DAY 31: It’s the final day! Can’t believe how quickly this month has gone. For my final dinner I tried a new recipe! Mushroom Alfredo!! I had a tub of Philadelphia Cheese in the fridge that needed using, so I found a Chicken Alfredo recipe and altered it to suit my veggie needs. It was surprisingly really good and made enough to have it for lunch tomorrow too! Can’t wait.

END OF MONTH REVIEW: Wow what an interesting month! I didn’t struggle anywhere near as much as I thought I would. and I really enjoyed the challenge!! At the end of this month I can now say I will not be eating Pork or Beef anymore. I might eat chicken on occasion. But I think I will stick with a mainly meat-free diet!

Some swap outs I will be continuing with, along with the price difference:
Veggie/Vegan Option -> Meat or None Vegan Option
Quorn Mince (£3 per 500g) -> Beef Mince (£2.35 per 500g)
Birdseye ‘Chicken’ Nuggets (£1 per 100g) -> Chicken Nuggets (52p per 100g)
Alpro Yogurt (£1.70 per 500g) -> Morrisons own Yogurt (80p per 500g)
Richmond Meat-free Sausages (£2.50 for 8) -> Pork Sausages (£1.49 for 8)
Violife Cheese (£2.50 per 200g) -> Morrison’s Own Cheddar (£2 per 200g)
Spicy Bean Burgers (£1.35 for 4) -> Beef Burgers (£3 for 4)

As you can see the Vegan/Veggie options are a bit more expensive.. in some cases much more expensive. But for me this doesn’t make much of a difference as it’s only for myself. But if you were trying to cook veggie/vegan for a whole family this may become quite pricey. The most affordable way to eat veggie/vegan when on a budget would probably to make use out of beans and lentils etc. and bulking out all of your meals with cheap vegetables.
