The Veggie Diaries: Week 2

Friday 08.01.21
Breakfast- black coffee (vegan)
Lunch- Nutella on toast (vegetarian)
Dinner- Spagbol (vegan minus the garlic bread)

Conclusion- DAY 8: Today I tried making Spagbol with Quorn Mince.. and it honestly tasted no different than when I have it with beef mince. I really enjoyed it, and actually felt better afterwards. It almost feels like a lighter version of Spagbol as I didn’t feel uncomfortable after. But don’t get me wrong… it was very filling! This meal was vegan, minus the garlic bread. So please, if you know where I can get some good vegan garlic bread let me know! I’m trying to find vegan alternatives to all my faves!

Saturday 09.01.21
Breakfast- black coffee (vegan)
Lunch- Spagbol (vegan)
Dinner- Mashed Potato + Peas (vegan)

Conclusion- DAY 9: I had a bad day today.. After a very indulgent Christmas I decided to go ‘cold turkey’ (excuse the xmas and non-veggie pun haha) by cutting out all snacks in the day (unhealthy ones anyways).. well I think my stomach went into shock and my Gastritis flared up! Not fun and very painful. This was either because of the lack of snacks throughout the day…or maybe it was the leftover Spagbol I had for lunch? (as onions and tomato can be a trigger for Gastritis, I believe). Tomorrow my plan is to eat little and often to stop this happening again.. so I will probably be having something like toast between lunch and dinner to keep me ticking over. I’ll let you know how I get on.
Because I felt so sick and uncomfortable (thinking about eating anything made me feel even more nauseous) I decided to make some mashed potatoes and peas, as it is super plain and the potato usually helps with my Gastritis. I am now feeling a bit better… still a tad nauseous but much better than I was before dinner. Ok I will talk to you again tomorrow! Yet another roast pork to avoid! Fun fun fun! (wish me luck..)

Breakfast- Black coffee + Banana Smoothie (vegan)
Lunch- Pesto Pasta (vegetarian)
Dinner- Roast (vegetarian)

Conclusion- DAY 10: After feeling so sick yesterday I decided I needed to have a banana smoothie after our morning walk… just to see me through until lunch. It was amazing, find the recipe here.
Absolutely gutted I’ve nearly run out of my homemade Pesto!! Praying my Basil plant gives me one more batch before she dies.. so making the most of my pesto with a yummy pesto pasta for lunch (only one more portion left now!)
For dinner I obviously had a roast (we have a roast every Sunday, sorry if that’s boring haha!) I’m such a donut though…before this challenge, I went and bought Vegetable Gravy?? But we always use onion gravy anyways which is ALREADY VEGETARIAN!! Haha. Ooops! Anyways mistake to one side.. another delicious roast this week! Also… I didn’t even fancy the pork this week! The smell and look of it just made me feel a bit sick.

Monday 11.01.21
Breakfast- Banana Smoothie (vegetarian)
Lunch- Nutella on Toast (vegetarian)
Dinner- Sweet Potato Satay Curry + Rice (vegan)

Conclusion- DAY 11: Today I was actually hungry when I woke up, so I had a banana smoothie before our morning walk.
For dinner I had Sweet Potato Satay Curry and rice. It was amazing, this is one of my tried and tested faves, so I knew it would be good! I would definitely recommend you try this recipe even if you aren’t going veggie as it is so yummy and might be a nice alternative meal for you! I think I saw somewhere that if every family just ate meat-free one night a week it would make a big difference! So why not give that a go! It will also save you money!!

Tuesday 12.01.21
Breakfast- Coffee with Soya Milk (vegan)
Lunch- Sweet Potato Satay Curry + Rice (vegan)
Dinner- Satay Veggie Stir-fry (vegan)

Conclusion- DAY 12: For dinner tonight I made a Satay Veggie Stir-Fry, this is a new one for me. It was really nice and creamy! Would definitely recommend you try it!
Side note: Yesterday I felt absolutely knackered for no reason. I’m hoping it was just hormonal, but I am slightly concerned it may have been due to my diet changes.. So I will be keeping an eye on this and if needs be, I will take some supplements.

Wednesday 13.01.21
Breakfast- Black Coffee+ Coco Pops with soya milk (vegan)
Lunch- Sweet Potato Satay Curry (vegan)
Dinner- Mustard Quorn ‘chicken’ (vegetarian)

Conclusion- DAY 13: Today I made my FAVOURITE dinner MUSTARD CHICKEN!! This is one of the meals I know I would miss if I did go full veggie. So I wanted to try using Quorn Chicken Bits instead of real chicken… I was praying it would be alright but honestly I didn’t expect to like it… BUT IT WAS EXACTLY LIKE REAL CHICKEN?!?! Brilliant! Quorn are really smashing these veggie alternative! So relieved, would 100% recommend!

Thursday 14.01.21
Breakfast- Black Coffee (vegan)
Lunch- Satay Veggie Stir-fry (vegan)
Dinner- Birdseye Meat Free Nuggets, Mash and Peas (vegan)

Conclusion- DAY 14: Another lazy day! I was feeling a bit unwell and just very tired today so I decided I wanted to make a VERY quick and easy meal for dinner, so I just whacked some nuggets in the oven, peas in the microwave and made some yummy creamy mash!! This is one of the best fast meals as it is healthy but also feels a bit naughty and like a kids meal haha. I will definitely buy the Birdseye Meat-free Nuggets again!! Better than real chicken.

END OF WEEK REVIEW: Week two is overrr! This week has been alright, I’ve not been craving meat too much. But I have been feeling VERY tired and unwell. So I’m hoping that this was temporary and not to do with my diet changes.. Keep reading to next week and I will let you know if I feel better! Fingers Crossed.
