Gingerbread

This recipe is good for gingerbread cookies or even making a gingerbread house for Christmas! Hope you enjoy.

Ingredients:

  • 180g butter, softened
  • 170g brown sugar
  • 190g golden syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 420g plain flour
  • 1 tbsp ground ginger
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • icing, to decorate and/or assemble the house.

Method:

  1. Mix together the butter, brown sugar and golden syrup until nice and fluffy.
  2. Add in the egg and vanilla and mix until fully incorporated.
  3. In a separate bowl, mix together the dry ingredients.
  4. Now you want to gradually add the dry ingredients to the other bowl, mixing as you go. (DO NOT OVER MIX)
  5. Divide the dough in two and wrap them in clingfilm (or an eco alternative).
  6. Chill the dough in the fridge for at least 2 hours, until firm.
  7. Pre-heat the oven on 180c and line some baking trays.
  8. Now you just need to roll out your dough until your desired thickness. Cut out the shapes you require! (This could be anything really.. If you are making a gingerbread house then find a template online or create your own.)
  9. Once your shapes are all cut out, whack them onto the lined baking trays and pop them in the oven for about 10 minutes. (this will depend on the size shapes you cut out. If you have very small ones, keep an eye on them as they will bake quite quick.. Equally if you are making a gingerbread house then pieces may take a bit longer.)
  10. Once cooked just whack them on a cooling rack and once cooled you can ice or assemble!
