Pesto

Ingredients:

  • 1.5 cups fresh basil
  • 1/4 cup parmesan or cheddar
  • 1/2 cup cashew nuts
  • 1 clove or garlic
  • 1/4 cup oil
  • salt and pepper to taste

Method:

  1. Place all of the ingredients into a bowl and blitz up using your hand blender (or a food processor if you have one).
  2. Taste then add more salt and pepper if needs be.
  3. Enjoy!

Tip: FREEZE your pesto! Simply pop the pesto into an ice cube tray, top with oil and place in the freezer for instant pesto action!
