Ingredients:
- 1.5 cups fresh basil
- 1/4 cup parmesan or cheddar
- 1/2 cup cashew nuts
- 1 clove or garlic
- 1/4 cup oil
- salt and pepper to taste
Method:
- Place all of the ingredients into a bowl and blitz up using your hand blender (or a food processor if you have one).
- Taste then add more salt and pepper if needs be.
- Enjoy!
Tip: FREEZE your pesto! Simply pop the pesto into an ice cube tray, top with oil and place in the freezer for instant pesto action!
