Mince Pies

Ingredients:

  • 250g butter
  • 375g plain flour
  • 1 egg
  • 125g caster sugar
  • 280g mincemeat
  • icing sugar, to dust

Pre-heat the oven on 200c

Method:

  1. Put the butter, sugar and flour in a bowl and rub together with your hands until combined.
  2. Add in the egg and mix together until it forms a dough.
  3. Knead the dough a little and wrap it in clingfilm.
  4. Place the dough in the fridge for 30 minutes.
  5. Once the dough is chilled sprinkle some flour onto a clean work surface and split your dough in half.
  6. One half is for the lids and the other for the bases.
  7. You want to roll your dough out pretty thin, but that is up to you.
  8. Grease your cupcake trays and put the mince pie bases into the cupcake trays.
  9. To each one you want to add a good spoon of mincemeat.
  10. Then you want to add the lids on top. We usually do hearts but I think stars would look so cute for Christmas too.
  11. Get some milk and brush it over the tops, and then sprinkle on some sugar.
  12. Whack the mince pies in the pre-heated oven (200c) for 20 minutes or until golden brown.
  13. Once they are cooked let them cool for a while as the mincemeat will be scalding hot. I know it will hard not to eat them right away but trust me it will really hurt! haha! (been there done that)
  14. Once cooled, dust with icing sugar and serve up with a nice cuppa tea or hot choc!
