Ingredients:
- 250g butter
- 375g plain flour
- 1 egg
- 125g caster sugar
- 280g mincemeat
- icing sugar, to dust
Pre-heat the oven on 200c
Method:
- Put the butter, sugar and flour in a bowl and rub together with your hands until combined.
- Add in the egg and mix together until it forms a dough.
- Knead the dough a little and wrap it in clingfilm.
- Place the dough in the fridge for 30 minutes.
- Once the dough is chilled sprinkle some flour onto a clean work surface and split your dough in half.
- One half is for the lids and the other for the bases.
- You want to roll your dough out pretty thin, but that is up to you.
- Grease your cupcake trays and put the mince pie bases into the cupcake trays.
- To each one you want to add a good spoon of mincemeat.
- Then you want to add the lids on top. We usually do hearts but I think stars would look so cute for Christmas too.
- Get some milk and brush it over the tops, and then sprinkle on some sugar.
- Whack the mince pies in the pre-heated oven (200c) for 20 minutes or until golden brown.
- Once they are cooked let them cool for a while as the mincemeat will be scalding hot. I know it will hard not to eat them right away but trust me it will really hurt! haha! (been there done that)
- Once cooled, dust with icing sugar and serve up with a nice cuppa tea or hot choc!
