Garlic and Chilli Sauce

Ingredients:

  • 100g caster sugar
  • 2 tbsp white wine vinegar
  • 1 long red chilli, finely chopped
  • 2 garlic cloves, peeled and finely chopped
  • 15g piece fresh root ginger, peeled and finely chopped
  • 1 tbsp chopped fresh coriander

Method:

  1. Put the sugar, 50ml water and one tablespoon of the vinegar in a small saucepan and gently heat until the sugar dissolves, stirring constantly.
  2. Bring to the boil and cook for one minute.
  3. Add the chilli, garlic, corriander and ginger and cook for a further minute, stirring occasionally.
  4. Remove from the heat, stir in the remaining vinegar and leave to cool.
