Couscous Salad

Ingredients:

  • Couscous, cooked
  • lemon juice
  • feta cheese, crumbled
  • kidney beans
  • tomatoes, diced
  • sweet corn
  • spring onions, sliced
  • coriander, chopped

Method:

  1. Pop all of the ingredients into a large bowl and mix together.
  2. Season well.
  3. Keep in the fridge for up to 4 days. This is ideal for quick lunches throughout the week!
