Ingredients:
- Couscous, cooked
- lemon juice
- feta cheese, crumbled
- kidney beans
- tomatoes, diced
- sweet corn
- spring onions, sliced
- coriander, chopped
Method:
- Pop all of the ingredients into a large bowl and mix together.
- Season well.
- Keep in the fridge for up to 4 days. This is ideal for quick lunches throughout the week!
