Sweet Potato Satay Curry

Ingredients:

  • 1 onion, diced
  • 2 garlic cloves, grated
  • thumb-sized piece ginger, grated
  • 1 tbsp Thai red curry paste
  • 3 tbsp crunchy peanut butter
  • 500g sweet potato, peeled and cut into chunks
  • 400ml can coconut milk
  • 5 balls of frozen kale or spinach (100g fresh)
  • 1 lime, juiced
  • cooked rice, to serve
