Veggie Burrito

Ingredients:

(For the Rice)

  • 2 cups cooked rice
  • 2 limes, juiced
  • 2 tbsp fresh coriander, chopped

(For the Salsa)

  • 1 red onion, diced
  • 250g tomatoes, diced
  • 1 lime, juiced
  • a bunch of fresh corriander, chopped
  • 1 chilli, grated (optional)
  • Salt and pepper, to taste

(For the Beans)

  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 200g mushrooms, diced
  • 1/2 cup peppers, diced
  • 1 can kidney beans, drained (or any beans you have in the cupboard)
  • 1 tsp chili powder (add more if you wish)
  • 1/2 teaspoon cumin
  • 1 can chopped tomatoes
  • pinch salt (to taste)

(To Serve)

  • Large tortillas
  • Soured cream
  • Salad
  • Spring Onion, Chopped
  • Any other toppings you fancy!
