Ingredients:
(For the Rice)
- 2 cups cooked rice
- 2 limes, juiced
- 2 tbsp fresh coriander, chopped
(For the Salsa)
- 1 red onion, diced
- 250g tomatoes, diced
- 1 lime, juiced
- a bunch of fresh corriander, chopped
- 1 chilli, grated (optional)
- Salt and pepper, to taste
(For the Beans)
- 1/2 onion, diced
- 3 cloves garlic, minced
- 200g mushrooms, diced
- 1/2 cup peppers, diced
- 1 can kidney beans, drained (or any beans you have in the cupboard)
- 1 tsp chili powder (add more if you wish)
- 1/2 teaspoon cumin
- 1 can chopped tomatoes
- pinch salt (to taste)
(To Serve)
- Large tortillas
- Soured cream
- Salad
- Spring Onion, Chopped
- Any other toppings you fancy!
