Ingredients:
- 450g self-raising flour
- 1/2 tsp baking powder
- pinch of salt
- 100g unsalted butter
- 225ml milk
- 1 egg
- 75g caster sugar
- 75g sultanas
Pre-heat oven on 220c
Method:
- Line a baking tray with baking parchment.
- Mix together the flour, baking powder and salt in a large bowl.
- Rub in the butter until it resembles breadcrumbs.
- Stir in the sugar and sultanas.
- Mix the milk and egg together and pour 2/3 of it into the mixture and bring together adding more until you reach the desired texture.
- Once you have reached the desired texture, turn it out onto a lightly floured surface and knead briefly.
- Roll the dough out until it is about 1cm in thickness, and cut out your scones. This mixture should make about 12, depending on the size cutter you use.
- Place the scones on the lined baking tray and brush the tops lightly with the remaining egg and milk mixture.
- Bake on the middle shelf of the oven for 10-15 minutes, or until golden brown.
- Serve with Clotted cream, Jam and a nice cuppa.
