Thai Green Curry

Ingredients:

  • 4 chicken breasts, diced (replace this with more veg if you want a meat-free alternative)
  • 2 tin of coconut milk
  • 1 tbsp Thai green curry paste
  • the juice of 1 lime
  • 1 clove garlic, minced
  • a handful of baby corn, chopped
  • a handful of mangetout
  • 1 red chilli, chopped
  • a handful of chopped coriander
  • 2 onions, chopped
  • Rice, to serve

Method:

  1. Cook off the onions with the garlic, and put to one side.
  2. Cook the chicken, add the onions/garlic, mangetout and baby sweetcorn.
  3. Add the coconut milk, curry paste, lime juice, chopped chilli and coriander.
  4. Cook for a while with the lid on until the vegetables are slightly softened.
  5. Serve with rice, about 90g per person.
