Ingredients:
- 4 chicken breasts, diced (replace this with more veg if you want a meat-free alternative)
- 2 tin of coconut milk
- 1 tbsp Thai green curry paste
- the juice of 1 lime
- 1 clove garlic, minced
- a handful of baby corn, chopped
- a handful of mangetout
- 1 red chilli, chopped
- a handful of chopped coriander
- 2 onions, chopped
- Rice, to serve
Method:
- Cook off the onions with the garlic, and put to one side.
- Cook the chicken, add the onions/garlic, mangetout and baby sweetcorn.
- Add the coconut milk, curry paste, lime juice, chopped chilli and coriander.
- Cook for a while with the lid on until the vegetables are slightly softened.
- Serve with rice, about 90g per person.
