Ingredients:
- 1 tsp oil
- 1 onion, roughly chopped
- 1 garlic clove, minced
- 1 tbsp medium curry powder
- 9oz basmati rice
- 500ml vegetable or chicken stock
- 7oz smoked mackerel
- 3oz frozen peas
- 1 lemon, juice only
- 2 tbsp parsley, chopped (optional)
- salt and pepper to season
Method:
- Cook the onion in a pan over medium heat until softened.
- Add the garlic and curry powder and fry for a further 1 minute.
- Add the rice and stock, mix well.
- Cover and bring to the boil, turn the heat down and simmer for about 15 minutes or until the rice has cooked through. Add more water if needs be.
- Stir in the flaked mackerel, peas, lemon juice and parsley and mix carefully.
- Season and serve once completely heated through.
