Smoked Mackerel pilau rice

Ingredients:

  • 1 tsp oil
  • 1 onion, roughly chopped
  • 1 garlic clove, minced
  • 1 tbsp medium curry powder
  • 9oz basmati rice
  • 500ml vegetable or chicken stock
  • 7oz smoked mackerel
  • 3oz frozen peas
  • 1 lemon, juice only
  • 2 tbsp parsley, chopped (optional)
  • salt and pepper to season

Method:

  1. Cook the onion in a pan over medium heat until softened.
  2. Add the garlic and curry powder and fry for a further 1 minute.
  3. Add the rice and stock, mix well.
  4. Cover and bring to the boil, turn the heat down and simmer for about 15 minutes or until the rice has cooked through. Add more water if needs be.
  5. Stir in the flaked mackerel, peas, lemon juice and parsley and mix carefully.
  6. Season and serve once completely heated through.
