Pineapple upside-down cake

Ingredients:

  • 6oz golden syrup
  • 10oz butter/margarine
  • 6 pineapple rings
  • 10oz caster sugar
  • 5 eggs
  • 10oz self-raising flour
  • candied cherries (optional)

Pre-heat the oven on 180c.

Method:

  1. Line a deep baking tray.
  2. Pour golden syrup into the bottom of the baking tray, enough to cover the bottom.
  3. Place the pineapple rings on top of the syrup and add the candied cherries if you desire.
  4. In a bowl, beat the sugar and butter together until light and fluffy.
  5. Add the eggs and flour, mix well.
  6. Pour the mix in top of the golden syrup.
  7. Bake in the oven for 45-60 minutes, or until golden brown on top.
  8. Remove the cake from the oven and set aside for 10 minutes.
  9. Flip the cake onto a plate and peel off the baking paper.
  10. Serve up with ice cream and enjoy.
