Ingredients:
- 6oz golden syrup
- 10oz butter/margarine
- 6 pineapple rings
- 10oz caster sugar
- 5 eggs
- 10oz self-raising flour
- candied cherries (optional)
Pre-heat the oven on 180c.
Method:
- Line a deep baking tray.
- Pour golden syrup into the bottom of the baking tray, enough to cover the bottom.
- Place the pineapple rings on top of the syrup and add the candied cherries if you desire.
- In a bowl, beat the sugar and butter together until light and fluffy.
- Add the eggs and flour, mix well.
- Pour the mix in top of the golden syrup.
- Bake in the oven for 45-60 minutes, or until golden brown on top.
- Remove the cake from the oven and set aside for 10 minutes.
- Flip the cake onto a plate and peel off the baking paper.
- Serve up with ice cream and enjoy.
