One Pot Roasted Chicken and Potatoes

Ingredients:

  • 1 kg chicken drumsticks and/or thighs
  • 2 tsp paprika
  • 2 tbsp dried rosemary
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1.5 tsp dried thyme
  • 2 tsp dried sage
  • 1 tbsp Dijon mustard
  • 1/3 cup olive oil
  • 3 tbsp lemon juice
  • 5 garlic cloves
  • 700g baby potatoes

Pre-heat the oven on 220c

Method:

  1. Put the paprika, rosemary, garlic powder, onion powder, thyme, sage, mustard, olive oil and lemon juice into a bowl and mix well.
  2. Season and marinade the chicken for a couple of hours, or over night in the fridge if you can.
  3. Once the chicken is done marinading, toss the potatoes with some olive oil, salt, pepper and rosemary.
  4. Place the chicken in a roasting tray and surround with the potatoes. Add the lemon pieces and the garlic cloves.
  5. Place in the oven for about an hour or until the chicken and potatoes are cooked through and golden brown.
  6. Serve with seasonal vegetables.
