Mustard Chicken

Ingredients:

  • 4 chicken breasts, diced
  • 1 tbsp Dijon mustard
  • 1 tbsp wholegrain mustard
  • 600ml double cream
  • salt and pepper to season
  • 3 red onions, sliced
  • 150g mushrooms, sliced (optional)

Method:

  1. Fry off the chicken and put to one side.
  2. In the same pan, fry off the onions.
  3. Pop the onions to one side with the chicken.
  4. Cook the mushrooms (if using them).
  5. Add the chicken and onion back in and pour in the cream, mustard and season.
  6. Simmer until the sauce thickens.
  7. Serve with Jacket potatoes and seasonal vegetables.

Tip: For a vegetarian version swap out the Chicken for Quorn Chicken Bits!
