Lemon Drizzle Traybake

Ingredients:

  • 12oz butter/margarine
  • 12oz caster sugar
  • 15oz self-raising flour
  • 1 tsp baking powder
  • 6 eggs
  • 6 tbsp milk
  • 3 lemons (zest)

(for the topping)

  • 9oz granulated sugar
  • 3 lemons (juice)

Pre-heat the oven on 160c.

Method:

  1. Cream together the butter and sugar.
  2. Mix together the milk and eggs.
  3. Add the egg/milk mix and flour to the butter and sugar. Mix well until fully incorporated.
  4. Add the lemon zest and mix.
  5. Pour into a lined baking tray (13″ x 9.5″ x 1.5″).
  6. Bake for 35-40 minutes or until the cake is golden brown and comes away from the sides.
  7. For the topping, mix together the lemon juice and granulated sugar and pour over the cake.
  8. Serve up and enjoy!
