Ingredients:
- 12oz butter/margarine
- 12oz caster sugar
- 15oz self-raising flour
- 1 tsp baking powder
- 6 eggs
- 6 tbsp milk
- 3 lemons (zest)
(for the topping)
- 9oz granulated sugar
- 3 lemons (juice)
Pre-heat the oven on 160c.
Method:
- Cream together the butter and sugar.
- Mix together the milk and eggs.
- Add the egg/milk mix and flour to the butter and sugar. Mix well until fully incorporated.
- Add the lemon zest and mix.
- Pour into a lined baking tray (13″ x 9.5″ x 1.5″).
- Bake for 35-40 minutes or until the cake is golden brown and comes away from the sides.
- For the topping, mix together the lemon juice and granulated sugar and pour over the cake.
- Serve up and enjoy!
