Leek and Potato Soup?

Ingredients:

  • 25g butter/margarine
  • 50g onion
  • 50g leek
  • 1 litre of stock or water
  • 400g peeled potatoes
  • salt and pepper for seasoning

Method:

  1. Melt the butter in a saucepan
  2. Add the onion and leek, cook for a few minutes until softened but do not colour.
  3. Add the stock and the potatoes. Season.
  4. Simmer for 30 minutes.
  5. Liquidise with your hand blender and reboil until you have reached the desired seasoning and consistency.
  6. Serve with a sprinkle of parsley and croutons if you fancy it.
