Ingredients:
- 300g plain flour
- 150g unsalted butter, slightly softened
- 75g caster sugar
- 1 large egg yolk
- 2 tins of apple filling (you could use any flavour, hence why it is ‘fruit pie’ my favourite is cherry! Yummmm)
- Milk, for glazing
Pre-heat the oven on 200c
Method:
- Line a 9″ pie tin with a generous amount of butter and sprinkle with flour.
- Put the butter and flour into a large bowl and mix until it has the texture of breadcrumbs.
- Add the sugar and egg yolk. Mix well until it forms a dough.
- Wrap the dough in clingfilm and place in the fridge for 10-30 minutes.
- Once the dough has firmed up from being in the fridge, half it and roll it out so that it is big enough to cover the pie tin.
- Place it into the pie tin and pour in the pie filling.
- Roll out the other half of the dough until it fits the pie tin. This will be the pie lid.
- Brush the pastry around the edge with milk and place the pie lid on top.
- Trim the edges of the pie and press them down with a fork.
- Brush the milk all over the top of the pie, add any decoration and brush that with milk as well.
- Sprinkle the pie with sugar and place in the oven for 30-35 minutes, until golden brown.
- Serve with ice cream or custard!
