Ingredients:
- 2 pints milk
- 1/4 onion, chopped
- 4 pepper corns
- 1 bay leaf
- a handful of parsley
- 640g fish
- 80g butter
- 80g flour
- 1 lemon
- salt and pepper to season
- 300g cooked peeled prawns
- 300g peas
- 3kg Mashed potatoes
Pre-heat the oven on 220c.
Method:
- Place the milk, onion, pepper, bay leaf, parsley and fish into a saucepan and boil for 10-15 minutes.
- Take the fish out of the milk and sieve the milk into a jug.
- Place a saucepan over medium heat, add the butter and flour and make into a rue. Gradually add the milk. Eventually change to a whisk and mix well until it forms a thick sauce.
- Season the white sauce and add the zest and juice of one lemon.
- Chop up a handful of parsley and add that too.
- Add the prawns and peas and mix well.
- Grab a nice big oven dish and add 1/3 of the sauce, flake the fish over the top and then pour on the rest of the white sauce.
- Put the mashed potato on top and whack it in the oven for 25-30 minutes or until the top is nice and golden.
- Serve up and enjoy.
