Recipe under construction…

Ingredients:

  • 2 pints milk
  • 1/4 onion, chopped
  • 4 pepper corns
  • 1 bay leaf
  • a handful of parsley
  • 640g fish
  • 80g butter
  • 80g flour
  • 1 lemon
  • salt and pepper to season
  • 300g cooked peeled prawns
  • 300g peas
  • 3kg Mashed potatoes

Pre-heat the oven on 220c.

Method:

  1. Place the milk, onion, pepper, bay leaf, parsley and fish into a saucepan and boil for 10-15 minutes.
  2. Take the fish out of the milk and sieve the milk into a jug.
  3. Place a saucepan over medium heat, add the butter and flour and make into a rue. Gradually add the milk. Eventually change to a whisk and mix well until it forms a thick sauce.
  4. Season the white sauce and add the zest and juice of one lemon.
  5. Chop up a handful of parsley and add that too.
  6. Add the prawns and peas and mix well.
  7. Grab a nice big oven dish and add 1/3 of the sauce, flake the fish over the top and then pour on the rest of the white sauce.
  8. Put the mashed potato on top and whack it in the oven for 25-30 minutes or until the top is nice and golden.
  9. Serve up and enjoy.
