Ingredients:
- 4 chicken breasts, cut into strips
- 3 red onions, sliced
- 3 bell peppers, sliced
- 150g mushrooms, sliced
(for the marinade)
- 1 tbsp smoked paprika
- 1 tbsp ground coriander
- 1 pinch of cumin
- salt and pepper to season
- 2 cloves garlic, minced
- 1 tbsp olive oil
- the juice of 1 lime
- 4-5 drops Tabasco
Method:
- Mix together all of the ingredients for the marinade.
- Marinade the chicken for a couple of hours.
- Once the chicken has marinaded cook it in a frying pan, over a medium heat.
- Once the chicken is cooked through, add the vegetables and cook until they are tender.
- Serve with Tortilla wraps, Tortilla chips, salsa and soured cream! I also like to garnish with a bit (or a lot) of coriander. My favorite is to have this with nachos like in the picture! Defo a family favorite!
