Ingredients:
- 8 sliced of bread (16 if small)
- 2 oz mixed dried fruit
- 2 tsp ground cinnamon
- 350 ml milk
- 50 ml double cream
- 2 eggs
- 1 oz granulated sugar
- nutmeg, grated to taste
Pre-heat the oven on 180c
Method:
- Spread butter over one side of each of the slices of bread.
- Arrange the layers of bread, butter side up, in the bottom of a greased baking tin.
- Add a layer of mixed dried fruit and sprinkle with cinnamon.
- Repeat for a second layer and set aside.
- Gently warm the milk and cream, to scalding point.
- Crack the eggs into a bowl and add three quarters of the sugar and whisk until pale.
- Add the warm milk and stir well.
- Pour over the bread and sprinkle with the nutmeg and remaining sugar.
- Leave to stand for 30 minutes.
- Bake for 30-40 minutes in the oven until the custard has set and the top is golden brown.
